Vanilla Chia Seed Pudding

This slightly sweet chia seed pudding is perfect to share with loved ones for Valentine's Day. With only five ingredients, the pudding comes together in just a few minutes and is best when left to set in the refrigerator overnight. Serve ruby red sliced strawberries as an extra touch for your valentine, or top with your favorite nuts and fruit for a sweet snack any time of year. Ingredients

½ cup milk or alternative milk

1 teaspoon sugar

2 tablespoons chia seeds

¼ teaspoon vanilla

Salt, to taste

Directions

  1. Wash hands with soap and warm water. 
  2. In a small microwave safe bowl, combine milk and sugar. Heat in microwave for 30 seconds or until the milk is warm enough to dissolve the sugar. Stir until sugar is dissolved.
  3. Add remaining ingredients and stir to combine. 
  4. Refrigerate for three hours or overnight.
  5. Serve chilled. Add your favorite fruit, nuts, or other toppings.
