Sweet Potato Smashies If you're buying sweet potatoes for a holiday meal, pick up an extra one for this yummy bite. Ingredients 1 sweet potato, about ½ pound 1 egg, lightly beaten 2 teaspoons vegetable oil non-stick cooking spray ⅔ cup flour ¼ cup packed brown sugar ½ teaspoon baking powder ¼ teaspoon baking soda ¾ cup raisins or dried chopped apricots 1½ teaspoons ground cinnamon Raisins or chopped dates for decorating Directions - Wash hands with soap and warm water. Wash fresh vegetables before preparing.
- Pierce sweet potato three times with a fork. Cook sweet potato in microwave on HIGH about 5 minutes or until tender when pierced with a fork.
- When sweet potato is cool enough to handle, cut open and scoop out the insides; then combine sweet potato, egg and oil in a small bowl.
- Preheat oven to 375ºF. Lightly coat a baking sheet with cooking spray.
- Combine flour, sugar, baking powder, baking soda, raisins or chopped apricots and cinnamon in a medium bowl; set aside.
- Add sweet potato mixture to flour mixture. Stir until thoroughly combined.
- Spoon mixture, two tablespoons at a time, onto baking sheet to make 8 mounds.
- Moisten fingertips with water and smash mounds gently with fingertips to about ½ inch thickness. Arrange raisins or chopped dates to make eyes, nose and mouth.
- Bake for 15 minutes or until very lightly browned and Smashies spring back when lightly touched.
